Air Fryer Vegetables

Cook your veggies in half the time with this Air Fryer Vegetables recipe! Cooking vegetables in the air fryer is a quick and hands-off method that yields tender and caramelized veggies using less oil than oven-roasting.

Ingredients

  • 1/2 large red onion chopped
  • 1 bell pepper chopped
  • 1 yellow squash chopped
  • 1 zucchini chopped
  • 1 cup bella mushrooms scrubbed; halved or quartered
  • 2 tbsp olive oil
  • 1 tsp italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Add the chopped veggies to a large bowl, then drizzle the olive oil overtop. Sprinkle the italian seasoning, garlic powder and salt overtop and stir everything together so the vegetables are coated.
  • Preheat air fryer to 400° (this should take about 3 minutes). Add HALF of the veggies and cook at 400° for 8 minutes, tossing halfway through; it’s ok if the vegetables overlap a bit, but you don’t want them to overlap too much or else they won’t cook properly.
  • Remove the veggies, then cook the second batch. Once all of the veggies have cooked, add them all together back in your air fryer and cook for 1 more minute before serving so that everything is warm. Enjoy!

Notes

*Calories are per serving and are an estimation.
*For frozen vegetables: Season as usual, then air fry for 10 minutes stirring halfway through; air fryer for any additional time to get the veggies charred (I did an additional 3 minutes).
*Note: cook in 2 batches for more even cooking and so the veggies brown better.
