Air Fryer Vegetables
Cook your veggies in half the time with this Air Fryer Vegetables recipe! Cooking vegetables in the air fryer is a quick and hands-off method that yields tender and caramelized veggies using less oil than oven-roasting.

- 1/2 large red onion chopped
- 1 bell pepper chopped
- 1 yellow squash chopped
- 1 zucchini chopped
- 1 cup bella mushrooms scrubbed; halved or quartered
- 2 tbsp olive oil
- 1 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
Add the chopped veggies to a large bowl, then drizzle the olive oil overtop. Sprinkle the italian seasoning, garlic powder and salt overtop and stir everything together so the vegetables are coated.
Preheat air fryer to 400° (this should take about 3 minutes). Add HALF of the veggies and cook at 400° for 8 minutes, tossing halfway through; it’s ok if the vegetables overlap a bit, but you don’t want them to overlap too much or else they won’t cook properly.
Remove the veggies, then cook the second batch. Once all of the veggies have cooked, add them all together back in your air fryer and cook for 1 more minute before serving so that everything is warm. Enjoy!

*For frozen vegetables: Season as usual, then air fry for 10 minutes stirring halfway through; air fryer for any additional time to get the veggies charred (I did an additional 3 minutes).
*Note: cook in 2 batches for more even cooking and so the veggies brown better.
