Baked Parmesan Chicken

Preheat oven to 425°. Line a large baking sheet with parchment paper then place a wire rack on top and spray with nonstick spray; set aside.
If you haven’t already, carefully slice both chicken breasts length-ways to create 4 thin chicken breasts.
Add the mayo to a small bowl, and pour the breadcrumbs and parmesan into a shallow bowl.
Brush each chicken breast with the mayo, then dip it into the breadcrumb mixture, using your hands to press the breadcrumbs into the chicken to make sure all sides are coated. Immediately place the chicken onto the wire rack. Repeat this process with all 4 pieces of chicken.
Place the baking sheet in the oven and bake the chicken for 20 minutes, flipping halfway through. Slice and enjoy!
