Cook potatoes

First, cook the chicken sausage then remove, then cook the potatoes in a large skillet with olive oil until *almost* soft.

Simmer milk

Sauté onion and garlic, then add milk and cornstarch and whisk until the cornstarch has dissolved.

Make cheese sauce

Add the cheese a little at a time, stirring continuously so that the cheese melts, creating a cheese sauce.

Combine

Stir in the spinach, then add the potatoes and sausage back into the skillet and stir until coated in cheese sauce.
