Mango Coconut Bites

These mango coconut bites are the perfect nut-free grab-and-go snack and a healthy snack to have on hand.

  • 12 oz. dried mango
  • 1 cup pitted dates
  • 1/4 cup coconut oil
  • 1/4 teaspoon vanilla extract
  • Water
  • 1/4 cup shredded coconut for topping


  • Pulse mango, dates, oil, and extract together in a food processor. Add water in 1 tablespoon at a time, as the mango may take awhile to crush up because of its texture**
  • Once smooth, form mixture into bite-size balls.
  • Roll in shredded coconut if desired.
  • Store in air-tight container (preferably in the refrigerator).
  • Enjoy!


**I added 3 tablespoon of water, but you may need to add more/less depending on the quality of your food processor
***The amount of bites you have in the end will vary depending on their size. It could range anywhere from 12-20.
