Tomato Bacon Green Bean Salad
Say hello to summer with this simple Bacon Green Bean Salad made with broiled green beans, bacon and tomatoes.
- 4 handfuls of fresh green beans
- 3 tbsp olive oil
- 3 strips of bacon cut into pieces
- 2 garlic cloves minced
- 1 1/4 cup grape or cherry tomatoes sliced
- Optional: 2-4 tbsp shredded parmesan cheese
Preheat oven to broil, then place beans on a large baking sheet and drizzle them with 2 tbsp olive oil. Broil beans for 10-20 minutes, or until they're cooked to your liking.
Meanwhile, cook the bacon in a large skillet over medium heat. Once bacon is cooked, use a slotted spoon to remove bacon, then add 1 tbsp olive oil, garlic and tomatoes and reduce heat to a simmer. Cook tomatoes on low until they are soft, then add bacon back into the skillet and stir to combine.
Pour tomato-bacon mixture over top of green beans, sprinkle with cheese and enjoy!
