Stone Fruit Ceviche

  • 1/2 lb. medium shrimp cut into bite-size pieces
  • 2 nectarines diced
  • 2 peaches diced
  • 2 plums diced
  • 1/4 cup red onion diced
  • 1 avocado sliced or diced
  • 2 tbsp cilantro
  • Juice from 3 limes
  • Salt and pepper to taste
  • Optional: 1 jalapeño


  • Place diced shrimp into a bowl; add the rest of the ingredients except for the lime juice, salt and pepper and stir to combine.
  • Last, add the lime juice, salt and pepper and stir until everything is coated.
  • Serve with your favorite tortilla or plantain chips.
