Blackberry Thyme Margaritas
These Blackberry Thyme Margaritas are made with a blackberry simple syrup, tequila, lime juice, and a little sparkling water and are a refreshing way to enjoy your favorite cocktail!
for the simple syrup:
- 6 oz. 1 cup blackberries fresh or frozen
- 2 sprigs fresh thyme
- 1 cup water
- 1 cup granulated sugar
for the margaritas:
- 1/4 cup blackberry simple syrup
- 4 oz. tequila
- 3 tbsp lime juice
- Sparkling water
Begin by making the simple syrup: add berries, thyme, water, and sugar to a saucepan and bring to a boil. Then, reduce heat to a simmer and simmer for 10 minutes, using a wooden spoon to break down the blackberries.
Remove saucepan from the heat and pour the mixture through a strainer and into a pitcher; discard the blackberries. Allow the syrup to cool to room temperature before using it.
For the margaritas: Salt the rim of 2 glasses (optional) and fill each one with ice. Add tequila, lime juice and 1/4 cup simple syrup to a cocktail shaker and shake for 15 seconds. Pour into the glasses, then top them off with sparkling water. Enjoy!
