Chorizo Mango Pizza

This Chorizo Mango Pizza uses chorizo in place of pizza sauce and is topped with fresh mango, poblano peppers and burrata cheese. It’s a must-try!

Ingredients

  • 1 ball pizza dough
  • 1 teaspoon olive oil
  • 4 chorizo sausage links diced (see notes for alternate options)
  • ½ cup red onion sliced
  • ¼ cup poblano pepper diced
  • ¾ cup mango diced
  • 1 ball burrata cheese
  • ¼ cup goat cheese
  • microgreens for garnish

Instructions

  • Preheat oven to 450° and line a large baking sheet with parchment paper; set aside.
  • Roll out the pizza dough and transfer it to the baking sheet.
  • Cook the chorizo in a skillet over medium heat with the olive oil for 8 minutes until it's nice and crispy. Use a slotted spoon to remove the chorizo and transfer it onto the pizza dough, ensuring minimal oil gets transferred.
  • Next, add the onion, poblano pepper and mango on top of the chorizo, then place the baking sheet in the oven and bake the pizza for 10 minutes.
  • Remove the pizza, then add the burrata cheese and goat cheese. Place the pizza back into the oven for 3-4 minutes or until the cheese has melted and the crust is golden brown,.
  • Sprinkle pizza with microgreens (optional), slice and enjoy!

Notes

*Calories are per slice and are an estimation
*Chorizo options: I used pre-packaged chorizo in the casing and simply diced it and cooked it. You could also use chorizo from behind the meat counter and remove the casing and cook it like ground chorizo (or sausage). Or, to make this recipe vegetarian, simply substitute your favorite plant-based meat. 
*Storage: store leftovers in the refrigerator for up to 48 hours; do not freeze. Reheat in the microwave or on a baking sheet in the oven at 350° until warmed through.
