Chop potatoes into thin slices; typically, the thinner they are, the crispier they'll become.
Line two baking sheets with foil and then spray the foil with nonstick spray.
Place potatoes in a large bowl and drizzle with olive oil and salt; stir.
Transfer potatoes to baking sheets; make sure they are evenly spread out and not overlapping one another. This way, they are able to become crispy and not soggy.
Bake fries for 25-30 minutes, flipping them after 15 minutes so they cook evenly.
Remove from oven, sprinkle with more salt and serve with several condiments of your choice.
