For the fruit compote: combine strawberries, blueberries, blackberries, orange juice, and honey crystals together in a saucepan and bring a boil. Once boiling, reduce heat to low and simmer for 10 minutes.
For the caramelized banana: slice banana into bite-size pieces and place in a skillet over medium-high heat. Add coconut oil and stir until banana is covered in oil; sprinkle with honey crystals and stir until banana is caramelized; set aside.
Layer the parfait with yogurt, oats, fruit compote and then top with bananas and extra honey crystals.
