Preheat oven to 350°.
Heat 2 tbsp coconut oil in a large skillet over medium-high heat; add chopped apples.
Sprinkle 1/2 tsp cinnamon and coconut sugar to apples and stir, allowing at least 5 minutes for apples to soften.
While apples are cooking, combine oats, cinnamon, sticks, and nutmeg in a large bowl; pour 1/4 coconut oil overtop and stir.
Once apples are done, add HALF of them to the bowl of oats and stir; pour mixture onto large baking sheet and bake for approximately 15-20 minutes, or until oats have hardened into granola.
Remove from oven, remove cinnamon sticks (optional) and stir in the rest of the apples.
