Lemon Lavender Muffins with Honey Yogurt Glaze

  • Preheat oven to 350°.
  • Combine dry ingredients (oat flour, almond meal, baking soda, baking powder) together in a bowl; set aside.
  • In a separate bowl, whisk together eggs, vanilla, yogurt, honey, milk, lemon juice and zest; stir in lavender by hand.
  • Line a muffin tin with muffin liners and spray each one with nonstick spray.
  • Pour batter evenly into each liner and bake for 10-15 minutes**; remove from oven and set on cooling rack.
  • For glaze: combine yogurt and honey together in a bowl and refrigerate for at least 30 minutes, allowing to harden slightly.
  • Ice muffins with glaze and enjoy!
