These peanut butter waffles are fluffy, delicious and made with whole wheat flour and plenty of peanut butter! The best part is that they don't require eggs, so if you're allergic or have simply run out, this recipe was made for you.
Combine dry ingredients (flour, sugar, baking powder & soda, salt) into a large bowl and set aside.
In a microwave safe dish, melt coconut oil; set aside.
Mash banana in the bottom of a large bowl (I used a fork to do this), then add the water, milk and vanilla; stir to combine.
Stir in the coconut oil and peanut butter with the wet ingredients, then combine the wet and dry ingredients.
Preheat your waffle maker and spray it with nonstick spray if necessary.
Once waffle maker is hot, scoop a heaping ½ cup of batter into the waffle maker and cook until the "ready" light comes on. Use a spatula or tongs to remove waffle from waffle maker. Repeat this process until the batter is gone.

*If the batter still seems too thick (it shouldn't!), add 1-2 tablespoon water.
