Homemade Sweet Potato Pizza

Preheat the oven to 425°.
Add butter and onions to a large skillet and cook over low heat until onions are caramelized, approximately 10-15 minutes. If onions start to burn, add 1-2 tablespoon additional butter or olive oil to skillet.
Roll out the pizza dough and transfer it to a large baking sheet or pizza stone. Add the caramelized onions on top, then the parmesan cheese, diced sweet potatoes, and prosciutto, then drizzle everything with a little olive oil.
Bake pizza for 10 minutes, then remove from oven, add the goat cheese and bake for 5 more minutes, or until the cheese has melted and the crust is golden brown on the edges.
Top pizza with arugula and enjoy!
