Once vegetables are chopped, cook in a frying pan with a dash of olive oil. Once cooked, pour into a bowl and set aside.
In a pot, bring chicken broth to a boil and then pour into a large bowl; add red pepper flakes, soy sauce and corn starch and stir. While waiting for the broth to boil, cook shrimp over stovetop in a frying pan. Set shrimp aside once cooked.
Coat a large frying pan with nonstick spray; add ginger. Heat on low and then add vegetables; stir frequently until thoroughly heated.
Add liquid mixture to the frying pan mixture, along with the cooked shrimp.
Simmer until liquid thickens. While simmering, cook brown rice over stovetop. Serve mixture overtop rice. Add salt and pepper to taste.
