Mom's Stir Fry

  • Once vegetables are chopped, cook in a frying pan with a dash of olive oil. Once cooked, pour into a bowl and set aside.
  • In a pot, bring chicken broth to a boil and then pour into a large bowl; add red pepper flakes, soy sauce and corn starch and stir. While waiting for the broth to boil, cook shrimp over stovetop in a frying pan. Set shrimp aside once cooked.
  • Coat a large frying pan with nonstick spray; add ginger. Heat on low and then add vegetables; stir frequently until thoroughly heated.
  • Add liquid mixture to the frying pan mixture, along with the cooked shrimp.
  • Simmer until liquid thickens. While simmering, cook brown rice over stovetop. Serve mixture overtop rice. Add salt and pepper to taste.
