Whole Wheat Vegan Morning Glory Muffins

These vegan morning glory muffins are made with whole wheat flour, walnuts, and shredded apples and carrots for the perfect texture.




  1. Preheat oven to 350°.
  2. Make the flax eggs and set aside.
  3. In a large bowl, stir flour, sugar, cinnamon, ginger, baking soda, baking powder, and salt together.
  4. Add milk, syrup and vanilla to the bowl and stir to combine; then, add flax eggs.
  5. Last, fold in the shredded apple, carrots and half of the nuts.
  6. Line muffin tin with muffin liners, then divide the batter evenly and sprinkle leftover nut mixture on top. Bake muffins for 20 minutes or until a toothpick comes out clean.
  7. Enjoy!


*To make 3 flax eggs, combine 3 tbsp flaxseed meal+7 tbsp water, stir, and wait 10 minutes for the flaxseed to absorb the water.
