Chickpea Lentil Curry

Sauté

Stir the carrot and bell pepper for 2-3 minutes, then add the shallot and garlic and cook until soft.

Cook the lentils

Add the spices, then pour in the tomato sauce, coconut milk and lentils and cook for 20 minutes.

Add chickpeas

Add the chickpeas and water, then cook for 10-15 minutes until the lentils are softt.

Top with cilantro and lime juice, and serve with rice. Enjoy!
