Do you know a pet peeve of mine? Slow drivers. More specifically, people who own cool cars who also drive slowly. I’m not a car person AT ALL, but I thought part of the fun of owning a sports car was to be rebellious and break the rules (and by rules I mean the speed limit) even just a little bit. The other day I got behind some sports car—I have no idea what car—but the guy driving it was going BELOW the speed limit. BELOW THE SPEED LIMIT. Why??? What is the point of having the cool car if you’re just going to drive like a turtle?
Since driving more frequently, I’ve developed a stronger case of road rage. I am not proud, but it’s true. Sometimes I drive my brother to the grocery store on the weekends and I’m certain he thinks ‘Erin, calm down…’ when I start cursing at the car in front of me. …so ladylike.
While we’re on the topic of pet peeves, I also hate when I order iced coffee in the wintertime and the barista is like “Iced?????? Are you sure????” ….um, yes. Yes, I’m sure. I know I’ve said it before and I’ll say it again—I don’t know what’s gotten into my taste buds this year. That “iced” example I just mentioned hasn’t happened this year (yet) because I’ve been loving on hot drinks. Ugh, now I’m just like everyone else. Ya see, I was trying to be different and unique and COOL by ordering iced coffee in the winter (I’m none of those things), but now I’m just like everyone else during the cold months. I guess that’s a good thing, though. There’s a reason why people order hot drinks. THEY KEEP YOU WARM.
I guess that’s kind of common sense. Whatevs. I sound like I’m in a complain-y mood today, but I’m not. I’m actually in a really good mood—thanks Friday 😉 This hot chocolate is VEGAN but you’d never know. Warm, chocolate and coconut topped with whipped cream, shredded coconut and almonds=pure [almond] joy. Ha, corny cornball.
Something I’m planning on doing this weekend? Curl up next to my nonexistent fireplace (so…my TV) and sip on a warm cup of hot chocolate, most likely while watching Mad Men. Now THAT is perfection.Print
Vegan Almond Joy Hot Chocolate
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Yield: 1 cup
- 1 cup almond milk
- 1 cup coconut milk
- 2 tbsp+1 tsp cacao (or cocoa powder)
- 1/4 tsp vanilla
- 1/4 cup dairy free cool whip (I used So Delicious Coco Whip)
- Pinch of shredded coconut
- 2 tbsp almonds, crushed
- Mix both kinds of milk in a pot over the stovetop and bring to a boil.
- Stir in cacao and vanilla and remove from heat.
- Pour hot chocolate into mug.
- Next, crush almonds in a fool processor until they are in tiny pieces.
- Add cool whip to hot chocolate; sprinkle almonds and coconut on top.
