So. Cinco de Mayo. I know it’s six days away, but we need to talk about it. Do you do anything to celebrate? I know I sure don’t, though I’m thinking maybe I should start, even if it’s just celebrating with myself. I could wake up and drink margaritas while watching Good Morning America, take a nap, go out to lunch at a Mexican restaurant, come home and RELAX, drink more margaritas, prepare this mango salsa, eat it all by myself, and then go salsa dancing.

I was actually planning on having it sound borderline pathetic, but that doesn’t sound like a terrible way to celebrate the holiday. Perhaps better with friends, but that wouldn’t be my situation since everyone else will most likely be at work ….UNLESS they start giving everyone that day off from work. How cool would that be? Ok now I’m just dreaming…
Speaking of salsa dancing, I’ve never been. Well, not technically anyway. One time, Miguel and I were in the DC area and his friends wanted to go to a Hispanic dancing club. Now, I’m not much of a club girl in general, but a Hispanic club… forget it. You should have seen my outfit—it was so embarrassing. I believe I was wearing jeans with a plain V-neck shirt?? In my defense, no one told me we were going so…. that’s my excuse. I’ve been wanting to go actual salsa dancing with Miguel here in Pittsburgh but we’ve never gotten around to it. And by that I mean we’re usually in bed before the actual salsa dancing begins. Two words: party. animals.
Whenever I do go out to Mexican restaurants, I always feel the need to order salsa of some sort. Truthfully, I adore the restaurants the bring you complimentary chips and salsa (why yes, I would like more!), but for the ones that don’t I always try to order some. Chips and salsa, chips and guac or possibly both—the salty goodness mixed with the spicy flavorfulness of the salsa is like a party in my mouth. Ew, I hate myself for saying that but…it’s true.
Cinco de Mayo is six days away, which gives you plenty of time to prepare this salsa—maybe even six different times—so you and your friends can enjoy some serious snackage with your margaritas, because margaritas without chips and salsa are kinda boring.Print
The BEST Mango Salsa
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 2-4 1x
- 1 cup pineapple
- 2 mangoes
- 1/2 cup red onion
- 1/4 cup tomatoes
- 1 tbsp cilantro
- Juice from 1 lime
- Chop up all vegetables into bite-size pieces and combine together in a bowl.
- Add lime juice and enjoy!
