This Thai Turkey Wrap with Peanut Sauce combines turkey deli meat, carrots, red pepper, lettuce and a creamy, dairy free peanut sauce into one delicious sandwich wrap.
The day has arrived! The day that I can finally share this Thai Peanut Turkey Wrap. I swear I made it forever ago and have been waiting patiently to share its perfectness with you.
Also, yesterday marked mine and Miguel’s one monthiversary. I honestly don’t know where time goes anymore. I guess when you’re away for half the month of July, time goes by even more quickly than usual.
Things that have changed now that we’re married: nothing. But that’s a good thing! I didn’t want anything to change and I still don’t, except maybe upgrading some of our furniture. I’m not sure if it’s because we’re married now or just because I’m trying to be an adult, but I’ve been online browsing new living room furniture for the past few days and I cannot stop. A lot of our furniture is the furniture we bought when we first moved in together three years ago, and while it’s fully functional, it’s just not that nice. Miguel mentioned that we should “look into” getting some new stuff, and now I’m hooked on the idea.
Of course the hardest decision is deciding between a black, white or glass coffee table. I CAN’T WITH DECISIONS. And since I figure I should probably be a bit more productive this week, we’re going to physically go to a few stores this weekend to look at stuff. Though I’m all for online shopping, sometimes it’s just easier if you can actually see what you’re buying in person.
Can we also agree that peanut sauce is THE BEST SAUCE EVER?! Though there are different variations of it, it’s essentially peanut butter, coconut milk, garlic, ginger, and some spices. If you haven’t had it before, I’m sure that combination sounds strange, but don’t knock it ’til ya try it. <—yes, really.
For this wrap, I used the peanut sauce in place of a typical condiment such as mayonnaise and turkey in place of chicken, which is what tends to be paired with peanut sauce. Though I tend to hate on turkey sandwiches (only because I used to eat them all.the.time), I will not hate on this Thai peanut turkey wrap.
I also just made another dish with this same sauce in it (that you may have seen on Snapchat @thealmondeater) and that recipe will be coming soon (hopefully by now you know “soon” means anytime within the next month..). For now, let’s enjoy this turkey wrap with peanut sauce and then dipped in even more peanut sauce every day for lunch.
Q: Where did you get your current furniture from (Target, West Elm, Pottery Barn, etc.) and do you recommend it? Help a sista out!
Thai Peanut Turkey Wrap
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 1 wrap 1x
- Peanut sauce:
- 1/4 cup peanuts
- 1/2 cup canned coconut milk
- 2 tbsp sugar
- 1 tsp red curry paste
- 1 tsp fresh ginger, grated
- 1 garlic clove
- 3/4 cup peanut butter
- 2 slices turkey deli meat
- 2 tbsp shredded carrots
- 4–5 thin slices red pepper
- 3–4 pieces of lettuce
- 3 tbsp peanut sauce
- For the sauce: put all of the ingredients in a blender and pulse for 15-20 seconds. You want the ingredients to mix, but the texture should still be similar to peanut butter. You want it to be thick and spreadable.
- Next, assemble the wrap.
- Start by spreading the peanut sauce on the wrap, then add the rest of the ingredients before rolling the wrap up.
- Dip wrap in extra peanut sauce and enjoy!
