Despite the fact that I’ve tried and tried to love grapefruit, I just don’t love grapefruit. Growing up, I’d watch my mom and brother eat grapefruit all.the.time. and every once in awhile I’d ask them if I could try a piece, despite the fact that I already knew it was going to end. The first time I tried grapefruit, I spit it out because that’s how much I hated it (#dramatic). I’m happy to report, I no longer feel that strongly against it, though it’s not my fruit of choice. So grapefruit lovers, this recipe’s for you. If you’re also not the biggest fan of grapefruit, have no fear—you can easily make this drink mostly strawberry with a hint of grapefruit !!! I’m biased, but it’s the way to go.
Apologies for talking so badly about grapefruit. If you love it, then this drink has your name written all over it. Have you ever heard of or made a shrub drink before? It’s basically fresh fruit juice combined with white vinegar. The trick is to let it mull for at least 48 hours so the flavors really absorb.

You know I have to ask—do you have any plans for the weekend? I’m going bowling tonight with some friends, and I believe Isabel and I are going to grab coffee or drinks Saturday, so that should be fun. Other than that, I’m hoping to bust out four recipes if all goes as planned and if the natural lighting works in my favor. Fingers crossed!
Ok so besides the strawberry and grapefruit flavors, this shrub also has a hint of fresh mint to it. You know strawberry mint is the jam, so obviously the flavors pair well together in this shrub.
The nice thing about this drink is that it’s nonalcoholic—something that I rarely share for reasons I’m unsure of. It’s nice to sip a nonalcoholic fruity shrub drink during the afternoon, and it’s especially perfect on those days when you’re craving something other than water.
This drink should keep in the refrigerator for at least a month, just be sure to store it in a glass jar with a lid.
PS-Happy St. Patty’s Day! I’m so bad with holidays, especially ones that aren’t Christmas or Thanksgiving, but I just remembered it’s a holiday. Hey, I bet this drink would be good with some vodka?!Print
Strawberry Grapefruit Shrub
- Prep Time: 15 mins
- Total Time: 15 mins
- Yield: 4-6 1x
- 1 grapefruit, peeled and sliced
- 2 cups strawberries, sliced
- 20 mint leaves
- 1 cup raw cane sugar
- 1/3 cup white wine vinegar
- Tonic water
- Combine grapefruit, strawberries, mint leaves, sugar, and vinegar together in a bowl and muddle with a muddler or wooden spoon for 3-5 minutes, or until everything is broken down.
- Cover bowl with a lid or with plastic wrap and store in the refrigerator for 48 hours, muddling for 1 minute each day.
- After the two days have passed, run mixture through a fine mesh strainer, discarding the fruit.
- Add ice to your glass along with 2-3 tbsp of the grapefruit syrup. Pour tonic water overtop. Adjust syrup as needed–feel free to add more syrup for flavor or more tonic water.
*Prep time doesn’t include the 48 hours you’ll need for the fruit flavor to absorb the vinegar
**If you’re not a huge grapefruit fan, feel free to use 1/2 grapefruit and 3 cups of strawberries instead (<--my personal preference!)
