This Strawberry Cucumber Cocktail is light and refreshing—a perfect poolside drink.

So. It’s May 5 aka Cinco de Mayo aka drink all the margaritas. ….so I made you a cocktail instead.
Ok, here’s the truth. I’m not a big tequila drinker. I’ll drink it from time to time, but I wasn’t going to buy a bottle of tequila just for a recipe and then have it sit around for years. And by “years”, I actually do mean years. I still have certain alcohol (ahem…rum) leftover from college sitting on stop of my refrigerator.

If I had my choice between a cocktail or rum or a beer, I would choose beer. I know, I know, I KNOW, please don’t hate me (or do)—let me explain.
First of all, let’s just roll rum right out of the picture because it’s only good when mixed with coke. Next, let’s talk about beer. I love it, and that’s all I’m going to say. But what about cocktails? Obviously there are a million different kinds of cocktails you can order or create, but you must agree with me that the majority of the time, they are really, really sugary drinks. This coming from the girl who rarely hates on sugar. In fact, there have even been times when I haven’t been able to finish my drink because of the sugariness. I wish I was kidding.
This drink isn’t like those drinks.
It’s essentially like naturally flavored water, but it’s naturally flavored vodka. No crazy mixers, no fake sugar, just fresh fruit.
What I’m trying to say is that it’s sweet but not too sweet. I absolutely adore the strawberry cucumber combination—it’s refreshing and screams summer, which it’s been feeling like a lot recently.
This drink should be enjoyed poolside, with chips, salsa and friends, every other day (every day and people may start to worry). If you’re like me and prefer cocktails that aren’t super sugar-filled, then this drink is for you!
Strawberry Cucumber Cocktail
- 2 cups club soda
- 1/2 cup vodka or champagne would probably work
- 2 cup cucumber sliced
- 1 cup strawberries sliced
- Mint leaves for garnish
- Combine soda, vodka, cucumbers, and strawberries together in a large pitcher.
- Place in refrigerator for at least 1 hour, allowing the fruit to become absorbed.
- Enjoy over ice!
