GRANITA—it’s the easiest recipe you’ll ever make aka blended ice but fancier. Have you made it before? I don’t have any upcoming plans to have friends over to my apartment, but when I do, I’m already planning on making this granita recipe. Actually, after I made and photographed this, I remember wishing I had people to to eat this because Miguel isn’t obsessed with strawberries (WHO isn’t obsessed with strawberries though?!!).
ANYWAY, I’m virtually sending you some of this right now, if only to beat the summertime heat. Despite the fact that it’s been raining pretty much nonstop fort he past month, it’s still quite humid and muggy outside, aka just as uncomfortable as the hot sun. I’ll admit the ice cream is optional, but I love the addition of vanilla flavoring and the pairings of texture—smooth ice cream topped with frozen ice—mmmmm.
The strawberry-basil flavor pairing is one that I adore though often forget about. Miguel and I went out to dinner a couple weeks ago and I ordered a strawberry basil margarita, which is what inspired this recipe all together, actually. If you’re going to enjoy granita with ice cream, I wouldn’t recommend adding tequila (I mean you totally can, but I probably wouldn’t). HOWEVER, if you want to make granita sans ice cream, feel free to add vodka or tequila or wine or heck, whatever your heart desires! Talk about the perfect poolside treat.
Are you ready to hear how easy granita is? For this recipe, you’ll add strawberries, basil, water, and some lime juice to a blender, and then pour everything into an 8×8 baking dish. You’ll want to leave it in the freezer for at least a few hours—I left mine in overnight—before using a fork to scrape the mixture, which will allow the ice to break down into small pieces like frozen ice, rather than it breaking off into large chunks. <—hopefully that makes sense.

Strawberry Basil Granita
- Prep Time: 5 mins
- Cook Time: 3 hours
- Total Time: 3 hours 5 mins
- Yield: 2-4 1x
- 1 lb. strawberries, stems removed
- 3 fresh basil leaves
- Juice of 1 lime
- 1/2 cup water
- Add ingredients to a blender and blend until everything’s combined.
- Pour mix into an 8×8 baking dish and place in the freezer for at least 3 hours, or overnight.
- When you’re ready to serve it, remove it from the freezer and use a fork to scrape down the mixture to form shaved ice.
- Serve ice in a glass as-is, or with some vanilla ice cream like I did.
