Spicy Sausage and Potato Soup

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat; add sausage and cook until browned, about 5 minutes; set sausage inside.
  2. In that same skillet, add 1 tbsp olive oil, reduce heat to medium, and then add the onion, carrots, celery and garlic, stirring occasionally for 3-5 minutes.
  3. Next, add the potatoes and kale and paprika, stirring to combine, and then pour chicken broth into the skillet.
  4. Bring broth to a low boil, and cover the skillet and reduce heat to a simmer. Simmer soup until potatoes are cooked, and then add the cooked sausage back into the skillet; stir to combine.
  5. Add salt and pepper to taste, and top soup with fresh parsley.
  6. Enjoy!


*I used mini Yukon gold potatoes–the kind you can find at Trader Joe’s and Whole Foods–but any potatoes will work!
**Feel free to add more paprika depending on how spicy you want the soup to be.
