Hello from Puerto Rico! I told you I had a post planned, and here it is. The weather here is b-e-a-utiful per the usual, and I’m so happy to be away, though if I’m being honest I was having minor separation anxiety when I dropped Layla off at the Dog Stop. Unlike Miguel who travels semi frequently, this will be the longest Layla and I have ever been apart. How pathetic do I sound? Like a mother sending her child to summer camp? Ok I’m done.
So what have I been up to, you ask? A whole lotta nothin’, just the way I like it. With Miguel being here for work, that leaves me to have the afternoons to myself, and then dinnertime/the evenings with Miguel. What do I do with me, myself and I? Lounge by the pool, go window shopping, eat lots of chip and guac, lounge on the beach, possibly fit in a workout… it’s not too shabby. Totally not the same as going on an actual, non work-related vacation where Miguel and I would typically spend the day exploring, but I’ll take this any day seeing as it seems to be the one vacation a year I can count on.
Though I’m currently in 80° sunshine, I know it’s very fall-like in Pittsburgh and other parts of the country right now. These smoked ham and apple skewers are the perfect fall (or anytime, for that matter) snack. First you marinate the apples and pears in coconut oil, coconut sugar and cinnamon before layering them on the skewers with Boar’s Head SmokeMaster™ Forest Ham. Then, if you’re really trying to step up your skewer game, you can dip the whole thing in extra cinnamon or coconut sugar. I know for me personally, lunch meat is a pretty regular part of my diet. While I don’t eat it every day, I tend to eat it on sandwiches and….sandwiches. SNORE FEST. I wanted to find a creative way to use lunch meat as a snack, and these skewers are just that. Smoked Ham and Apple Skewers
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Yield: 6 skewers 1x
- 6 slices of Boar’s Head SmokeMaster Black Forest Ham
- 1 apple
- 1 pear
- 2 tbsp coconut oil
- 1 tbsp coconut sugar
- 1/4 tsp cinnamon
- Chop up apple and pear into bite-size pieces.
- Head coconut oil in skillet over medium-high heat and place apples and pear in skillet; add coconut sugar and cinnamon and cook until fruit is completely covered and softer, approximately 5 minutes.
- Add fruit to skewers, along with 1 piece of ham per skewer (I cut the ham in half and folded it a few times so it would fit).
- Sprinkle with additional cinnamon if you wish and enjoy!
