A super quick and super healthy salad. This Salmon Cabbage Salad features apples, onion, bacon, and of course salmon for a light and simple lunch dish. Make it ahead of time, pack it for lunch and make all your coworkers jealous!
GUYS. I don’t think I’ve mentioned it yet, but I’m going wedding dress shopping this weekend. EEEEEEEEE! While I am excited (hence the “eeeeeee”), I’m a bit nervous. And by nervous, I really just mean that I hope I find something I like within my budget. I’d hate to have my mom and MOH come into town and me walk around dress-less. I’m also nervous because I feel like I’m going to like everything…. I’m so stinkin’ indecisive, so I’m hoping I’ll have that ‘wow’ moment like all those other chicas on ‘Say Yes to the Dress’ do.
Speaking of SYTTD, some of those people are crazy! As are many people on television, but seriously.. Perhaps I should say some of the families are crazy. Do you think it’s all for TV? I’m 92% certain the producers of the show tell the family they have to be a little ridiculous if they want the episode to air. Would a mom really tell her daughter she looks terrible? It’s usually not what they say, but how they say it. …..please tell me you watch SYTTD so you know what I’m talking about? Yes? Great. No? Sorry about that completely random thought. We can talk about something else..
Like FOOD. No wait—before we talk about food, can I also just mention how Miguel and I took Layla to a PUPPY SWIMMING POOL (!!!) on Monday? I didn’t even know there were such things, but there definitely are, and they are amazing. Well, this one was anyway. Pittsburgh peeps: it’s called Lucky Paws and it’s a Cranberry Township. It was a tad further of a drive than I prefer (like 30 mins), but it was affordable, super nice and Layla loved it. It was her first time in a swimming pool and, though she was a bit skeptical at first, she ended up loving it and went all the way to the deep end before we left. We were proud pup parents, and hope to make it back at least one more time before the summer ends, preferably on the weekend when other pups will be there for her to swim with (insert emoji with hearts as eyeballs).
Ok, now to the food.
You know I always save the best for the last, and in this case, the best is SALMON. I know I just posted a salmon recipe and now I’m posting another one—who do I think I am? A salmon lover, that’s who. This recipe uses cabbage (I used green cabbage, but any cabbage will work), spiralized apple (you definitely don’t haaaaaaave to spiralize the apple, but I was feeling particularly fancy), red onion, bacon, and of course salmon, and is covered in a dressing that’s half sour cream, half yogurt for a light lunch dish. If you LoOoOove yogurt and want to be supa healthy, you could just cover everything in yogurt, but you know I don’t LoOoOove yogurt, so I did half and half. It’s up to you!
Regardless, this is a really wonderful dish to make ahead, pack for your lunch and make all your coworkers jealous. Ultimately, that is what you want, right?! Right.
Salmon Cabbage SaladPrint Pin Rate
- 2 salmon filet
- 2 tbsp olive oil
- 4 cups cabbage
- 4 slices bacon
- 1/4 cup red onion
- 2 apples spiralized or chopped (I used granny smith)
- 1/4 cup sour cream
- 2 tbsp plain Greek yogurt
- Heat oil in a skillet and cook salmon all the way through; in a separate skillet, cook bacon.
- While those are cooking, place cabbage in a bowl and chop/spiralize apples and add them to bowl.
- Once bacon and salmon are done, chop them both up and add them to the bowl.
- Pour sour cream and yogurt overtop and mix well.
