These Peanut Butter Maca Bites are made with good-for-you ingredients, including maca powder, and are the perfect travel snack.

Just a little snackity snack to kick off the week! I mean talk about the perfect travel fuel. Balls/bites/snack bites/whatever you want to call them—they’re simply the best. 

Personally, I like making a big batch of them and keeping them around the house to snack on throughout the week. But they are perfect for traveling as well. 

Truth be told, maca is a superfood I tend to neglect, which is the main reason why I created this recipe. I wanted a way to incorporate a little maca into my diet, and something other than a smoothie too. Maca root/powder is high in antioxidants, vitamin C, iron, and it gives you energy in a natural way. What’s not to love?

I wish I could say I’m writing this post from Italy (except I don’t wish that at all—this vacation is a [mostly] work-free vacation), but the truth is that I’m writing this ahead of time. Two weeks ahead of time, to be exact, which is so out of character for me. Typically I write my blog posts the day before so that everything is fresh in my mind. These peanut butter maca bites are not only made with peanut butter and maca, but oats, almonds, syrup, and coconut oil as well. I opted to roll them in extra maca powder (kind of like how you would normally roll cookies in powdered sugar) for a little oomph. They’re quite tasty, if I do say so myself!

Peanut Butter Maca Bites

Ingredients

  • 1 cup old fashioned oats
  • 1/2 cup raw almonds
  • 3 tbsp hemp seeds
  • 2 tbsp chia seeds
  • 1 tbsp maca powder plus more for topping
  • Pinch sea salt
  • 3 pitted dates
  • 1/2 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil melted

Instructions

  • Add oats, almonds, hemp, chia, maca, and salt to a food processor and pulse for 10-20 seconds; then, add the dates and pulse until combined.
  • Last, add the peanut butter, syrup and oil and pulse until everything is combined.
  • Use your hands to roll mixture into bite-size balls.
  • Optional: after you roll them with your hands, you can roll them into a little extra maca powder. If you want to do this, pour some maca out onto a plate or into a bowl to make it easier.
  • Place maca bites on a plate and enjoy! These can be stored in the refrigerator OR at room temperature.

    I love having energy bites around the house, and these look great! I just got a small pouch of maca powder to try, and like you have been dreaming of ways to use it besides in my smoothies. Thanks for the recipe!

  • It’s a rainy day in Pittsburgh, which really makes me want a warm bowl of SUN-DRIED TOMATO SOUP made with @californiasundry sun-dried tomatoes 🍅 #ad full recipe below! #californiasundry ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3 tbsp sun dried tomato oil (from the bottle)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5 vine ripe tomatoes, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/2 cup yellow onion, sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4 garlic cloves, smashed ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup @californiasundry sun dried tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 can (6 oz.) tomato paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 cups vegetable broth ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup milk of choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Salt and pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Fresh basil for garnish ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1.   • HI! I feel like it’s been a minute and I want to chat HEALTH. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the last couple months, I’ve been feeling kind of off. My migraines are becoming more frequent (again), and I’ve been experiencing almost daily nausea for two months. As 2019 comes to an end, I must say there are a couple things I’ve learned. 1) Every BODY is different, and what works for one person might not work for another. This is something I’ve always known, but I kind of forgot to remind myself of it throughout the year. 2) LISTEN TO YOUR GUT. We all have gut instincts on what to do when something seems “off”. If you’re me, you tend to quiet that voice (bc HIIII I’m super stubborn), but don’t! I knew months ago that I should seek the help of a functional medicine doctor to try to get to the root cause, but waited until a couple weeks ago to actually go. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ I wanted to talk about this awhile ago, but kept telling myself it wasn’t important and that so many people have it worse. And, I didn’t and still don’t want to sound complain-y. But, the truth is, we all have SOMETHING and though I don’t have it all figured out quite yet, I’m hopeful that 2020 will be the year I truly heal my migraines/joint pain/nausea 🤞🏻 If you’ve also been feeling off recently, just know that I’m right there with you. *more in my stories*
