These Paleo Coconut Orange Pancakes are light, fluffy and bursting with flavor. Made with coconut flour and sweetened with honey, they make a delicious and healthy breakfast.
Yeahhhhhh another breakfast recipe—WOO! Besides any and all of dessert, breakfast is by far my favorite meal of the day. Perhaps it’s because I’ve always been a breakfast eater, or maybe because breakfast fuels your body for the rest of the day (….corny, but true). Orrrrr maybe it’s because I like variety in my breakfasts.
With that said, my “typical” breakfast is eggs, chicken sausage, kale, and toast. HOWEVER, I’m trying to switch it up by only eating that 2-3 times per week and eating other things (i.e. pancakes, oats, asparagus, chia pudding, etc.) the rest of the week. So far I’m doing pretty well! This also explains why I’ve posted a million breakfast recipes this month. ….for my own selfish reasons.
These are only my second pancake recipe after my Red Velvet Pancakes because, like I said in that post, I’m a horrible pancake flipper. You didn’t know that was a thing, but it is. These were no exception. They took me so many times, not because the recipe failed, but because they didn’t look pretty in pictures because I CAN’T FLIP PANCAKES. I don’t know what’s wrong with me—it’s not that difficult. I don’t even know how I got these to flip so beautifully, but I did, and for that I am grateful.
Note: there’s nothing about this recipe that makes these difficult to flip; I’m just incapable.
With that said, these pancakes are

I’ve noticed that I enjoy cooking and/or baking with orange but that I don’t actually enjoy eating oranges. It’s strange, but also kind of normal I think? I think everyone has a food like that—a food that they only enjoy sometimes. For me, that food is oranges. And tomatoes. And peppers. Sheesh, now I just sound like a picky eater.
I don’t know what your family eats Easter morning, but I guarantee these would be a winner in your household. I’m thinking about whipping some up for Miguel and I since it will just be us Easter morning aaaand since when I originally made these we downed them in TWO SECONDS, meaning we both at four pancakes like it was nbd. ..because it is nbd.

Paleo Coconut Orange Pancakes
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins
- Yield: 6-8 pancakes 1x
- 1/2 cup coconut flour
- 1 tsp baking soda
- Pinch of salt
- 4 eggs
- 1/2 cup+2 tbsp unsweetened almond milk
- 1/2 tsp vanilla extract*
- 2 tbsp honey
- 1/4 cup coconut
- Zest from 1 orange
- Combine dry ingredients (flour, baking soda, salt) in a bowl.
- In a separate bowl, combine eggs, milk, extract, and honey.
- Fold wet ingredients into dry ingredients. Stir in coconut and zest by hand.
- Grease a skillet with coconut oil or nonstick spray and pour batter onto skillet. Once batter starts bubbling, use a spatula and carefully flip pancake. Once both sides are cooked, remove from heat. Repeat process until batter is done.
- Top pancakes with orange and extra coconut and enjoy!
