Do you hate me? I hate me. I mean, it’s -8 degrees outside right now and I’m over here talking about summer. A gal can dream, right? Lucky for me I’ll be in California tomorrow through Sunday for my second business trip—what a tease that weather will be! Hopefully you recognized at least one of those songs or else that intro was a major fail on my part! I mean, I included the artists so hopefully you do.
Before I leave for my trip, I thought I’d share a summertime salad recipe with you all.
I know a lot of people said that eating more salads/veggies is one of their New Year’s resolutions. Just because it’s winter doesn’t mean you can’t enjoy a summer recipe now does it? I hope not. I know for me personally I often find myself craving winter foods during summer and summer foods during winter. It makes no sense, but it’s the truth.
Mango Salsa Summertime Salad
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 2 1x
- 2 c. spinach
- 2 c. jumbo shrimp
- 1 tbsp olive oil
- 1/2 c. dried cranberries (I used the reduced sugar Craisins)
- 1/4 c. roasted and unsalted sunflower seeds
- 1/4 c. goat cheese crumbles
- 2 tbsp mango salsa (approximate)
- Thaw shrimp; Once thawed, marinate in olive oil and cook over stovetop until slightly browned.
- Mix spinach, cranberries, sunflower seeds, and goat cheese into a bowl.
- Place shrimp into the mixture.
- Top with mango salsa.
The best part about this salad is that you don’t need dressing—it calls for mango salsa instead! I don’t know if you’ve ever tried mango salsa but it is my faaaavorite. I may even like it better than regular salsa.
