These mango coconut bites are the perfect nut-free grab-and-go snack and a healthy snack to have on hand.

2 bags (12 oz) dried mango
1 cup pitted dates
1/4 cup coconut oil
1/4 tsp vanilla extract
1/4 cup shredded coconut for topping
Pulse mango, dates, oil, and extract together in a food processor. Add water in 1 tbsp at a time, as the mango may take awhile to crush up because of its texture**
Once smooth, form mixture into bite-size balls.
Roll in shredded coconut if desired.
Store in air-tight container (preferably in the refrigerator).
**I added 3 tbsp of water, but you may need to add more/less depending on the quality of your food processor
***The amount of bites you have in the end will vary depending on their size. It could range anywhere from 12-20.
