These Lemon Ice Cream Pops are made with your favorite lemon ice cream—or any flavor, really—and placed into popsicle molds for an easy, summertime treat.
Ohhhh have I got a treat for you! ICE CREAM POPS, as in, pops made from ice cream, as in they’re only one ingredient as in stupid easy recipe alert! Let’s get to it.
You may have seen the Instagram story last week of me at the 412 Food Rescue event at Millie’s Homemade Ice Cream. I mentioned in this post that I’m working with 412 Food Rescue throughout the year, this event in particular was their volunteer appreciation night where 412 rescue volunteers could stop by, get free ice cream and all just hang out, really. It was a fun, laid back night, and I enjoyed getting to meet more people from the organization. Oh, and I was also stoked that it was at Millie’s because I’m obsessed!
Millie’s is always serving up the most unique ice cream flavors made with farm-fresh ingredients. On the night of the event, they were featuring a lemon mulberry ice cream, and I learned a few fun facts about the process of creating that flavor. Within the 412 Food Rescue organization, there is a program called Hidden Harvest, where volunteers go to public and private backyards and gardens to rescue excess produce and deliver it to community organizations, where they can put it to good use. In this case, Hidden Harvest rescued a bunch of fresh mulberries, and Millie’s decided to use them in their lemon mulberry ice cream flavor. How cool is that?!
Since the mulberries were rescued, the lemon mulberry flavor was only available for a few days, but still—if you were one of the lucky ones to try it, then you know how good these ice cream pops were. The good news is that you can basically use any ice cream flavor you want for these ice cream pops! Want to know how?
1) Grab your favorite ice cream flavor from the store/local ice cream parlor. 2) Wait until the ice cream is soft—you can even melt it in a bit in the microwave if you’re impatient like me, and 3) Fill up your popsicle mold with ice cream and wait at least four hours before removing the ice cream pops from the mold.
These ice cream pops are a great way to avoid eating an entire pint of ice cream at once! But really.

Lemon Ice Cream Pops
- Prep Time: 5 mins
- Cook Time: 4 hours
- Total Time: 4 hours 5 mins
- Yield: 10 pops 1x
- 2 pints of your favorite ice cream flavor
- If using hard serve ice cream, wait until ice cream has softened a bit before pouring into your popsicle mold. Feel free to microwave the ice cream for a few seconds to speed up this process.
- Place pops into the freezer for at least 4 hours before carefully removing them.
- If you used lemon ice cream like I did, they taste really delicious with a bit of honey drizzled over top.
