Is it wrong of me to already be thinking about the breakfast post-Thanksgiving? That’s weird, right? The weirder part is that I’m not one of those people who looks forward to Thanksgiving food for months and months on end. I mean sure, I like turkey and mashed potatoes just as much as the next person, but nothing compares to eggs.
Yes, I’m serious. That’s how much I love eggs.
Ok, ok but hold on—before you get all mad ’n stuff—I decided to combine the two to please both you and myself. Turkey and sweet potatoes for you, eggs for me. Sounds fair.
In all honesty, I know my family isn’t the only family who has a TON of leftover Thanksgiving food every year. ….which sounds great, but then you end up spending days upon days eating turkey and potatoes. At first it’s great—you can’t imagine your life without turkey and potatoes—but by day 5 it’s terrible and you’re repulsed by the thought. Avoid that by eating turkey for for all three meals, starting with this scramble. That way, you’re only stuck with leftovers for 3 days instead of 5 and your belly is happy.
…..total estimations on those days. Seriously, how am I supposed to know the amount of leftovers you have? Maybe your family is just THAT amazing and makes the exact amount of food for everyone to have a perfect portion so that there are zero leftovers, to which you probably won’t be making this for breakfast to which I feel bad for you because this is amazing. Of course his Thanksgiving egg scramble will look a little different for everyone depending on what your family eats for the holiday. This particular scramble features beans, corn, sweet potatoes, and turkey, but I bet it would be hella good with a giant pile of mashed potatoes on top as well. Leftover Thanksgiving Egg Scramble
- Cook Time: 10 mins
- Total Time: 10 mins
- Yield: 2-3 1x
- 8 eggs
- 1 tbsp olive oil
- 1 sweet potato, sliced
- 1/2 cup green beans
- 1/4 cup corn
- 1 cup turkey, sliced/chopped
- Salt, pepper and red pepper flakes to taste
- Heat oil in large skillet and scramble eggs accordingly.
- Heat up leftover sweet potato, beans, corn, and turkey either in the microwave or over the stovetop.
- Combine vegetables and turkey with eggs, top with salt, pepper and red pepper, and enjoy!
*Feel free to add more or less potatoes/beans/corn/turkey depending on the amount of leftovers you have.
