Put a fun flavor spin on almonds and make these super simple Honey Sriracha Roasted Almonds with chia seeds the next time you need a healthy snack!
I can’t believe I thought yesterday was Wednesday… you know how sometimes you forget what day it is for a split second? I feel like I felt that way all day Monday. Woof. Well, here we are half way through the week, FINALLY and I’ve got some delicious sriracha roasted almonds for ya!
People often as me how I came up with ‘The Almond Eater’, and my answer always feels like such a letdown. The truth is I was going through a major almond phase—addiction, really—when I came up with the name of my site. It was my senior year of college and I was working as a hostess at two different restaurants. Though I occasionally worked during the day, a typical shift was usually from 4:30-9, or 5-10 pm, meaning I didn’t get a break. Now before you go thinking OMG WHAT, please know that my job wasn’t difficult and minus maybe one hour, the rest of the time I was either on my phone or reading a book.
Super professional, eh?
Though I didn’t feel overworked whatsoever, I did often feel HUNGRY. So I did what any normal person would do and used to pack a giant bag (I’m talking like a 12 oz. bag) of raw almonds to snack on because they were filling. I did this at least 3 days a week—and by “this” I mean I basically ate almonds for dinner, so ‘The Almond Eater’ just kind of made sense. It’s a rather lame story, but it’s the truth.
If you’ve read my about section you’ll know that almonds are no longer listed in my top five favorite foods, because though it was many years ago, I really went overboard with my almond consumption. Now, with that said, I still really long almonds, they just usually have to be eaten in trail mix form, or I need them to have some flavor to them. ……like honey sriracha! Ohhhh yeah, you knew I was going there. These honey sriracha roasted almonds are EVERYTHING you never knew you needed but totally do.
Tip: make sure to put parchment paper down on the baking sheet! I didn’t because I liked the way the almonds looked against the baking sheet without the paper (always thinking about the photos), but if you forget, the almonds WILL stick to your baking sheet. If you do forget though, no worries—you’ll just have to use a spatula to scrape them off, which is what I did.
Tip: Feel free to taste test these almonds before placing them in the oven. In the recipe I’ve provided, you’ll taste the honey more than the sriracha, so if you want these to be spicier, feel free to add more sriracha!

Ingredients
- 2 cups raw almonds
- 1/3 cup honey
- 2-3 tbsp sriracha
- 1 tbsp chia seeds
- Sprinkle of salt
Instructions
- Preheat oven to 350°.
- Pour almonds in a bowl and set aside.
- In a separate bowl, combine honey and sriracha; stir well.
- Pour that mixture over the almonds and stir so that the almonds are coated with honey and sriracha. Then, add the chia seeds and salt and stir to combine.
- Line a baking sheet with parchment paper and pour almonds on baking sheet, spreading them out into a single layer.
- Roast almonds for approximately 15 minutes.
- Remove from oven, store in an airtight container and enjoy!
This would be the best snack ever. I love it being sweet and salty at the same time and there’s perfectly roasted almond.

Lol I love your blog name story. If I were to name my blog after a nut addiction I would most definitely be The Cashew Eater… That doesn’t sound nearly as cool as The Almond Eater though.
