These Flourless Almond Butter Blondies are made with plenty of almond butter and topped with a cinnamon maple glaze for good measure.
BLONDIES, aka my new favorite kind of brownie. ….yes, really.
So here’s the deal—and I haven’t talked about this much on the blog (I swear I’ll write an in-depth post one of these days)—but the truth is that I can’t really eat chocolate anymore because chocolate gives me a headache.
*cue gasps and tears*
I KNOW, I know. REALLY long story short, I had been getting headaches on a daily basis for over a year, and finding headache triggers was a bit tricky. According to doctors and experts, chocolate can be a major trigger for some people, and though I hadn’t noticed a direct correlation before, I decided to cut it out of my diet and see what would happen. The result? Fewer headaches. Like, significantly fewer headaches.
The big question is, do I miss chocolate? Honestly? Not nearly as much as I thought I would. I really like sugar (heh), and there are many other ways for me to curb my sweet tooth, like these almond butter BLONDIES, for example. They hit the spot for sure. I’m determined the reason they’re so good is because of the perfectly-textured almond butter that is the Fresh Thyme creamy almond butter. MMMMM.

Now as for these blondies, they’re FLOURLESS which is cool, and they taste like almond butter goodness topped with a cinnamon maple glaze. What’s not to love? Pick up a jar of creamy almond butter and get baking!

Flourless Almond Butter Blondies
For the blondies:
- 1 jar or 1 1/2 cups 16 oz. Fresh Thyme creamy almond butter
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup cane sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup sliced almonds
For the glaze:
- 3 tbsp maple syrup
- 1/4 tsp cinnamon
- 1/2 cup powdered sugar
- Preheat oven to 350°.
- Combine almond butter, eggs and vanilla in a bowl and stir; then, add sugar, baking powder, baking soda, and salt and stir to combine.
- Last, stir in the almonds by hand.
- Spray an 8x8 baking dish with nonstick spray or grease with coconut oil, then scoop batter into dish.
- Bake blondies for 25-30 minutes, then wait at least 20 minutes before cutting and serving.
- For the glaze: whisk all ingredients together until smooth; drizzle over blondies.
