Paleo Mango Chicken Salad Sandwich

Serves: 2 sandwiches
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 mango
  • 2 avocado
  • 3 tbsp yellow onion
  • 1 tbsp cilantro
  • 1 tbsp dairy free yogurt (I used So Delicious)
  • 1 tomato
  • Juice from ½ lime
  1. Chop chicken up into bite-size pieces.
  2. Heat olive oil in a skillet and cook chicken until cooked all the way through and slightly golden on the outside.
  3. While chicken is cooking, chop up mango, onion, tomato and cilantro and place in a bowl; add chicken.
  4. Mix together and then add avocado, yogurt and lime juice and stir until everything is mixed together.
  5. Serve on your favorite bread.
  6. Enjoy!
