Creamy cashew milk ice cream inside of two flourless peanut butter cookies. These delicious Dairy Free Peanut Butter Ice Cream Sandwiches are a peanut butter and ice cream lover’s dream come true!
AWWW yeah—I scream, you scream we all scream for ice cream!…but preferably dairy free ice cream, at least for me anyway. I’ve noticed my stomach doesn’t love dairy. This is probably because I’ve unintentionally stopped consuming it, well, minus cheese. I LOVE CHEESE. I don’t drink dairy milk, I don’t enjoy the taste of dairy yogurt, and now that I’ve gotten my hands on delicious and creamy dairy free ice cream, I don’t think I’ll go back. ….until Miguel offers to buy me a soft serve cone from this adorable ice cream shop on top of Mount Washington. Ok, ok you get my point—I’m flexible—but I do enjoy the way NOT eating dairy makes me feel.
Besides not eating dairy, I also like the way peanut butter makes me feel. The feeling I’m referring to is happiness. Peanut butter=pure joy. So, I thought why not revamp my Flourless Almond Butter Cookies with peanut butter? I’d had a few readers tell me they did and the cookies turned out great, so I figured I’d give it a go. Plus, who doesn’t love the classic chocolate peanut butter combo?
UGHHH so good. When So Delicious sent me a sample of their new Cashew Milk ice cream, my mind went to one place: ice cream sandwiches. There wasn’t even a second thought in my mind.
My brother and I grew up on a cul-de-sac and, when we were younger, we were pretty close with some of our neighbors. One neighbor in particular used to always give us popsicles and ice cream sandwiches. Every time we noticed she was home, and especially when she was outside, we would innocently yet not so innocently walk up to her and start a conversation, hoping she’d give us some sort of ice cream treat. Luckily, she always did. Does that make us terrible humans? We liked her, but we really just wanted ice cream.
Oh and see, these do freeze well! …I’m referring to the above photo. After making these I was so excited that they 1) turned out successfully and 2) tasted delicious that I immediately took the photos. After my food photo shoot, I put them in the freezer to make sure they could be eaten like actual ice cream sandwiches. Thankfully, they can. You can simply leave them on a plate in the freezer, or wrap them individually in plastic wrap to ensure they’ll hold their shape. Whatever you prefer!

Dairy Free Peanut Butter Ice Cream Sandwiches
- Prep Time: 15 mins
- Cook Time: 15 mins
- Total Time: 30 mins
- Yield: 6 sandwiches 1x
- 1 cup peanut butter
- 2 tbsp honey
- 1 egg
- 1 tsp baking soda
- 1/4 cup dairy free chocolate chips
- Ice cream:
- Approx. 1 cup favorite flavor of dairy free ice cream (I used So Delicious Dark Chocolate Truffle)
- Preheat oven to 350°.
- Whisk eggs together in a large bowl.
- Add peanut butter, honey and baking soda and mix together.
- Stir in the chocolate chips by hand.
- Using a spoon, scoop out the dough and place on a baking sheet.
- Bake for 12-15 minutes.
- Remove from oven and allow time for the cookies to cool a bit.
- Use a tablespoon to scoop out ice cream and place in between two cookies. Gently press cookies together to flatten out ice cream. Use a spoon or spatula to smoothen out the ice cream if desired.
