I’ve recently come to a semi strange conclusion, that being that I’m pretty certain lunch is my favorite meal of the day.
I know—HOLD THE PHONE—but I’m serious. While the rest of the world is obsessed with breakfast, I’m fairly certain I could live off of soups, salads and sandwiches. I love breakfast and dinner of course, but my tastebuds never tire of lunch foods. It’s a strange and sort of beautiful thing.
Oh and when I say “favorite meal”, that doesn’t include dessert, obviously.
When you think “lunch”, what comes to mind? Soup? Salad? Sandwiches? I know those are what I think of, with sandwiches at the top of that list.
Sandwiches have always been a staple in my diet. In high school, I packed a turkey sandwich in my lunch on a pretty regular basis; sandwiches were and still are a simple lunch option. With that said, packing the EXACT same sandwich every day gets a little boring after awhile. These BBQ beef sandwiches are anything but that.
These sandwiches start with a mixed grain hamburger or hot dog bun and then are split in half and spread with low fat mayonnaise. After that, you’ll roll the deli style roast beef slices and place them overtop of the mayo. Next comes the really good part (in my opinion). Next, you’ll spoon your favorite barbecue sauce over the roast beef and then top the sandwich with the other hamburger bun and watch the sauce ooze overtop.
Sorry, drooling over here. Yes, drooling over a super simple sandwich. I love it.
Besides the taste, the best part about these sandwiches is that they require just five minutes to whip up. FIVE, that’s it!
If you’re planning on packing these in your lunch, which you definitely should, I’d recommend packing the barbecue sauce separately and putting it on your sandwich right before you eat it so the sauce is fresh and not dried up.

- 2 whole grain hamburger buns
- 2 tsp low fat mayonnaise
- 4 tsp barbecue sauce
- 4 oz. deli style roast beef
- Split hamburger buns in half lengthwise.
- Spread 1 tsp of mayonnaise on the bottom half of each bun.
- Roll roast beef slices and place on top of mayonnaise, 2 oz of roast beef per sandwich.
- Spoon 2 tsp of barbecue sauce over the roast beef on each sandwich; top with remaining bun halves.
- Serve with vegetables such as carrots, if desired.
