Enjoy a big bowl of Cinnamon Spice and Pomegranate Oatmeal this season. Warm oats mix with cinnamon spice and then are topped with coconut and pomegranate seeds for a sweet yet healthy breakfast.
OATMEAL. It tops the list of foods I’m not a huge fan of, so my lovely readers, this recipe is for YOU.
And yes, of course I still ate it—I just placed it in the refrigerator and waited for the oats to cool off so I could eat them overnight oats style. …..obviously.
But before we faceplate into oats—how was your weekend?! If you follow me on Snapchat (username: thealmondeater) then you already know that I A) was amazed by the warm weather, B) drank a delicious chocolate peanut butter milkshake Saturday night and C) ate scones like it was my job yesterday afternoon.
But let’s go a little more in-depth with all of that. How crazy is this weather?! It was 70° on Saturday!!! And this is Pittsburgh we’re talking about, so I’m typically expecting 40 degree highs. Ah well….onto letter B, aka the moment I drank a chocolate peanut butter milkshake on a Saturday night and watched ‘Amy’. If you’re ever in the Pittsburgh area, go to the Milkshake Factory. Just do it and then thank me afterward. Along those same lines, the next time you want to stay in and watch Netflix, watch ‘Amy’, the documentary on Amy Winehouse’s life. It puts so many things into perspective and was just a really well done documentary and it was apparently the most watched documentary of 2015. Crazy.
Last but not least, scones. …except I’m not going to tell you anything about THAT because you’ll be getting the recipe in a week or two. Stay tuned!
However, I ammmmmmm quite ok with talking about oatmeal (for once). This oatmeal is sweet but not too sweet, and features pomegranates, which as it turns out, are much easier to cut than I realized. I always thought it was some huge feat if you were able to cut and de-seed a pomegranate, but it literally takes 3 minutes, maybe. With that said, it’s never a terrible option to just purchase the seeds instead of the whole pomegranates, if only to save yourself a few minutes.
Oh PS I added a tablespoon of butter and a tablespoon of brown sugar. You don’t NEED them, but they take it from great to amazing, as butter and brown sugar tend to do. Once again, it’s up to you if you want to add them in or not.

Cinnamon Spice and Pomegranate Oatmeal
- Cook Time: 5 mins
- Total Time: 5 mins
- Yield: 1 1x
- 1 cup almond milk
- 1 cup rolled oats
- 2 tbsp maple syrup
- 1 tbsp dairy free butter
- 1 tbsp brown sugar
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 cup shredded coconut
- 1/4 cup pomegranate seeds
- Optional: handful of walnuts
- Heat milk in a saucepan over stovetop; bring to a boil.
- Remove from heat and stir in oats; add in syrup, butter, brown sugar, chia seeds, and cinnamon.
- Lastly, stir in coconut and pomegranate seeds.
