Cilantro Tahini Sweet Potato Wedges

Sweet potato wedges on top of farro that have been drizzled with cilantro tahini sauce

These tahini potato wedges are roasted to perfection then topped with a simple, flavorful cilantro tahini sauce.



for the cilantro tahini sauce:


  1. Preheat oven to 400°.
  2. Place sweet potato wedges on a lined baking sheet and drizzle them with olive oil. Roast in the oven for 20-25 minutes or until they’re soft.
  3. While sweet potatoes are roasting, cook the farro.
  4. Next, place all sauce ingredients in a blender or food processor and pulse until smooth.
  5. To serve: place farro on a plate or in a bowl, then top it with the sweet potato wedges and drizzle everything with the tahini sauce. Sprinkle with fresh cilantro for serving.
