I love love. There I said it. I love everything about it. But you know what else I love? Chocolate.
I mentioned not being the biggest fan of Valentine’s Day in last Thursdays post, but that doesn’t mean Miguel and I don’t celebrate. In fact, we’re going to dinner Sunday night (because we couldn’t get reservations tonight or tomorrow….) so that counts as something I think.
When Davida announced that she was hosting a Valentine’s Day link-up, my initial thought was oh shit, I suck at baking. My second thought was, seriously, Erin? You can come up with something. And so I did.
Yes you’re seeing that correctly, I got away with making a Valentine’s Day treat without having to bake at all ☺
When I was deciding what kind of “bite” to make, I looked in my pantry to see what I had and guess what I found? Figs. I had never had a fig before. Why on earth were there figs in my pantry? I don’t know, but I was determined to use them somehow.
I’d read recipes where bloggers used dates as the main substance (I’ve also never had a date), so I figured a fig couldn’t be much different. These are delicious and the perfect after-dinner treat (Ok I probably say that for every “bite” I make but it’s true!). The M&M’s are what really make this special and help to curb my never-ending chocolate craving.
Chocolate Almond Fig Bites
- 15 dried figs
- 3 tbsp unsweetened cocoa powder
- 3 tbsp honey
- 1 cup raw almonds
- 2 tbsp unsweetened coconut
- 1/2 c. M&M’s
- Place dry ingredients into a high-powered food processor; process until mixed.
- Add honey; mix together.
- Form into balls and store in an air-tight container in the refrigerator.
