I know caramel sauce is the opposite of a summer food, buuuuuut we’re doing it anyway. Also, apparently I’m into SPICY mixed with sweet lately, so hopefully you are too.
Though I haven’t really mentioned it, Miguel has been traveling a lot lately both for his job and the Army Reserve. In fact, he just came back from a 3 week trip to Poland and Germany this past weekend Woohoo! Layla couldn’t contain her excitement—she has a giant smile on her face when he walked through the door to our apartment on Sunday. ’Twas the cutest thing EVER.
Ok so what I’m trying to say is that after coming back from one of his trips he brought me a bag of different flavored caramels. Of course there were the usual flavors: original, chocolate, sea salt caramel, but there was also Chipotle Caramel. I was immediately and simultaneously skeptical and intrigued but, as you might have guessed, it was love at first bite. Seriously.so.good, I obviously had to recreate my own.
I’ve already gone on and on and on about my homemade caramel sauce so I won’t go too in depth with that (7 ingredients, dairy free, ready in 30 minutes, amazing), but this recipe is essentially that recipe plus the addition of some chipotle seasoning (I used this brand) and then even more sea salt.
Tip: The sauce should be the proper texture once you get done stirring it. However, if it’s not (one time I made it and it was still too liquid-y), place the sauce in the refrigerator for 20-30 minutes and it should firm right up!
Tip: I recommend starting with a very small amount of the chipotle seasoning. You can always add more if you want it to be spicier, but you can’t take it out once you’ve already added it in. I used 1/4 tsp and thought that was a perfect amount, but you can decide for yourself.
And hey, just because it’s summer doesn’t mean we can’t enjoy a good chipotle caramel sauce, right?! Right.
- 1/2 cup maple syrup
- 1/3 cup coconut cream
- 2 tbsp coconut oil
- 1 tbsp butter dairy free for vegan and paleo option
- 1 tbsp coconut sugar
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1/4 tsp chipotle seasoning
- Combine ingredients in a saucepan and bring to a boil.
- Once boiling, reduce for a simmer for 20-25 minutes.
- Once time is up, stir mixture for 5 minutes straight, allowing caramel to thicken up.
- Transfer caramel to a cup/jar/dish and store in the refrigerator.
- Reheat as needed and enjoy!
