This simple 3-ingredient Banana S’mores Pancakes recipe will have you craving pancakes every day of the week! Topped with marshmallows, melted chocolate and extra banana, it’s both QUICK and satisfying to the sweet tooth.
I’m fairly certain the first time I tried s’mores was when I was at Girl Scout camp when I was around 9 years old, aka the glory days. Though I gotta say, I remember the camp itself better than the s’mores eating part, which is both unfortunate and ok at the same time. Did you attend Girl Scout camp and, if so, do you remember it much? Do girls even want to join Girl Scouts anymore?
When I was in elementary school, Girl Scouts was considered cool and since my ultimate goal was to be cool I obviously joined. Or my mom forced me… Either way, I remember it being fun and full of crafts and team building. As for camp, I can recall there being a part of the day where we would all bring something knick knack-like—like those iron on magnets—and then we’d trade stuff with one another.
Ok clearly this memory is really, really vague and therefore this conversation is about to head south. Let’s save it by going back to s’mores..
Though I love s’mores—and I do—I always thought they tasted better when banana was added into the mix. Obviously if you’re making them over a fire this is a little challenging, but if you’re making them at home it’s doable! The only thing about s’mores is that I kind of forget they exist except in the summertime. Why should we limit ourselves from indulging in such deliciousness to only a few months out of the year?! I declare s’mores ALL YEAR LONG aaaaand in every form possible, starting with pancakes because it’s Sunday brunch time!
I’m not going to lie—I’m pretty lazy when it comes to pancakes. I LOVE them, but I hate having to mix 10 ingredients together and then wait for all of them to cook. These pancakes are just 3 ingredients, and then you can choose to add the marshmallows, chocolate and extra banana if you wish (and by that I mean you should). The pancakes are banana+eggs+oat flour—THAT’S IT!
For the marshmallows, I found that you can “roast” them one of two ways: 1) You can put them on a baking sheet and broil them for 5 or so minutes or 2) You can place a single marshmallow on a skewer and then literally roast it overtop of a stovetop burner. If I’m being honest, I think the stovetop burner works a little better, as in that method literally replicates roasting over a real fire. BUT it takes a lot longer and it’s little more dangerous, so I opted to simply broil the marshmallows. For the sake of these pancakes being QUICK, you’re probably going to want to do the same.
Oh! One last thing: I made this recipe a small batch recipe, meaning it makes about 6 pancakes–perfect for two people in my opinion. If you’re trying to feed a crowd, feel free to double the recipe!Print
Banana S’mores Pancakes
- Prep Time: 5 mins
- Cook Time: 15 mins
- Total Time: 20 mins
- Yield: 6 pancakes 1x
- 2 ripe bananas
- 3 eggs
- 1/4 cup oat flour
- melted chocolate (chocolate+coconut oil)
- Mash bananas in a large bowl with a fork–mash REALLY well so that most lumps are out.
- Add eggs and flour and whisk together either by hand or with an electric mixer until mixture is smooth.
- Grease skillet with oil or nonstick spray and pour a small amount of batter at a time. Wait until batter starts bubbling and edges start hardening and then carefully flip over.
- Repeat this process until batter is done.
- Optional: To “roast” the marshmallows, place on a baking sheet and broil on high for approximately 5 minutes or until marshmallows start to turn golden brown on the outside.
- Top pancakes with melted chocolate, extra banana and syrup and enjoy!
