Today we’re finally eating persimmons in a recipe I like to call persimmon toast, aka the recipe that isn’t technically a recipe. It’s toast, after all. But, persimmons have always kind of intimidated me, and I was determined to make something with them. Before I start making some sort of fancy persimmon layered cake (<<not the worst idea), I wanted to make something simple like toast.
Do you eat persimmons? They were never a fruit I ate growing up; I don’t think I tried my first one until last year. Yes, really! I’m not going to sit here and say they’re my favorite fruit—I feel like they don’t have a strong taste—but they pair really well with almonds and honey. Eating persimmons in the form of persimmon toast is a great way to squeeze some fruit into your morning.
I can’t write this post without mentioning that OH MY GOD it’s almost Christmas! Miguel and I are currently in DC with his family, just hanging out and visiting all his relatives. Well, technically they’re all coming over to his parent’s house, which makes things a little bit easier and less stressful for us in terms of traveling. In addition to seeing his family, we’re hoping to see his best friend while we’re there too. I hope you’re enjoying this weekend before the true craziness of the holidays sets in!
You know I like an easy-to-prepare breakfast recipe. Likewise, this persimmon toast recipe is quite simple. I used almond butter, persimmons, sliced almonds, honey, a little granola, and hemp seeds. Many of these ingredients were things that I had on hand; for the granola, I simply used my favorite ginger-flavored granola, but you could use plan or cinnamon-flavored or whatever kind you want. Similarly, any nut butter should work in this recipe.

This persimmon toast is topped with fresh persimmons, almond butter, nuts, and a drizzle of honey for a healthy and filling breakfast or snack.

- 1 slice of your favorite bread
- 2 tbsp almond butter or nut butter of choice
- 1 persimmon, sliced
- 1 tbsp sliced almonds
- Pinch of hemp seeds
- Drizzle of honey
- Optional: 2 tbsp of your favorite granola
- Toast bread to your liking.
- Spread almond butter on the bread, then top it with the persimmon and other toppings. Feel free to adjust the ingredient measurements as needed.
