Believe it or not, July 4th is right around the corner. You know what that means? It’s time to start thinking about FOOD. Yes, healthy July 4th food is a thing, and today I’ve compiled a long list for you. Maybe you’re planning on having friends and family over for a cookout, or maybe you want to bring a snack with you while waiting for the fireworks to start. Whatever the case, this list is loaded with better-for-you sides, appetizers, snacks, and desserts.

Personally, 4th of July has become one of my favorite (maybe my actual favorite?) holiday, mostly because it’s right around mine and Miguel’s anniversary. This year, we’re planning on going to D.C. and have talked about doing a picnic before the fireworks, so I’ll be keeping my eyes on these recipes for the next few months.   • It’s a rainy day in Pittsburgh, which really makes me want a warm bowl of SUN-DRIED TOMATO SOUP made with @californiasundry sun-dried tomatoes 🍅 #ad full recipe below! #californiasundry ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3 tbsp sun dried tomato oil (from the bottle)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5 vine ripe tomatoes, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/2 cup yellow onion, sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4 garlic cloves, smashed ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup @californiasundry sun dried tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 can (6 oz.) tomato paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 cups vegetable broth ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup milk of choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Salt and pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Fresh basil for garnish ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Sauté the tomatoes, onion and garlic with the sun-dried tomato oil in a large pot (I used my Dutch oven) over medium heat until the tomatoes are soft. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Next, add the sun-dried tomatoes and tomato paste and sauté for 1 minute before adding in the broth and milk. Bring soup to a simmer, then cover the pot and reduce heat to low, simmering for 10 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Use a slotted spoon to scoop soup contents into a blender and pulse until smooth. Pour mixture back into the pot and stir to combine.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Serve with extra milk (or heavy cream) on top and fresh basil and enjoy!

  • HI! I feel like it’s been a minute and I want to chat HEALTH. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the last couple months, I’ve been feeling kind of off. My migraines are becoming more frequent (again), and I’ve been experiencing almost daily nausea for two months. As 2019 comes to an end, I must say there are a couple things I’ve learned. 1) Every BODY is different, and what works for one person might not work for another. This is something I’ve always known, but I kind of forgot to remind myself of it throughout the year. 2) LISTEN TO YOUR GUT. We all have gut instincts on what to do when something seems “off”. If you’re me, you tend to quiet that voice (bc HIIII I’m super stubborn), but don’t! I knew months ago that I should seek the help of a functional medicine doctor to try to get to the root cause, but waited until a couple weeks ago to actually go. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➖⠀⠀⠀⠀⠀⠀⠀⠀⠀ I wanted to talk about this awhile ago, but kept telling myself it wasn’t important and that so many people have it worse. And, I didn’t and still don’t want to sound complain-y. But, the truth is, we all have SOMETHING and though I don’t have it all figured out quite yet, I’m hopeful that 2020 will be the year I truly heal my migraines/joint pain/nausea 🤞🏻 If you’ve also been feeling off recently, just know that I’m right there with you. *more in my stories*
