Woooooow—clearly I’m coming off of a weekend-long high of relaxing and eating and still dreaming of summer while simultaneously embracing all things pumpkin. It’s weird.
Today though, it’s all about ICE CREAM FLOATS, which remind me of my childhood so I have to assume you feel the same way? Today’s hibiscus ice cream float is like the adult version though. Just look at that color….!
Rewinding for one second… how was your Labor Day weekend? Ours was just the right amount of relaxing mixed with “stuff” and by stuff I mostly mean family time. Friday we did nothing… No seriously, I think we watched 6 episodes of The Office and then went to bed. Saturday we both got a little work done in the afternoons before heading out for dinner and drinks. Oh! And Saturday was Layla’s birthday, so that was fun. I feel like she’s so spoiled anyway, but I like to spoil her a little bit more on her actual birthday. Then, Sunday and Monday we just cleaned the house and spent time with my mom’s side and dad’s side of the family.
All and all, a very happy Labor Day weekend. The only thing that would’ve made it better would have been this hibiscus ice cream float.
This recipe is stupid easy—you basically just make hibiscus tea as you normally would, then you chill it in the refrigerator before pouring it, along with some sparkling water, overtop of ice cream. See? Super simple. You could technically do this with any kind of tea—lavender would be delightful as would chai. Ohhhh!! So many options. I do recommend using some type of vanilla-based ice cream though, since the tea is the flavor you really want to shine.

Hibiscus Ice Cream Float
This hibiscus ice cream float is made with brewed hibiscus tea and sparking water and then poured over top of your favorite vanilla ice cream. It’s a nice and refreshing way to cool down!

- 2 hibiscus tea bags
- 2 cup water
- 1/2 cup cane sugar
- 3 cups sparkling water
- Your favorite vanilla ice cream
- Boil the water and sugar together, then add the tea bags and steep for a few minutes. Pour tea into a large jar and place in the refrigerator to cool.
- Before serving, scoop ice cream out into cups or bowls. Then, add sparkling water to the jar with the brewed tea.
- Pour hibiscus tea over ice cream and enjoy!
