This Raspberry Pistachio Smoothie is full of vitamin C thanks to the strawberries and orange and has a hint of saltiness thanks to the pistachios.
Insert: a strange but delicious smoothie combo, because I’m basically ALWAYS craving salty and sweet, even in smoothie form.
Ok, ok but wait. Before you start thinking this is a SALTY smoothie, it’s not. It’s barely salty—it has a hint of saltiness thanks to the pistachios, but it’s mostly sweet thanks to the raspberries and strawberries and orange and honey. See? Mostly sweet.
Just had to clear that up.
Also – random – it’s April 9 and I just realized I never did a March recap post. UGH. Guys the time is just flying by TOO QUICKLY I tell ya!! I’ll do an April recap and include all things March and April I promise. We’re too deep into the month at this point—there’s no turning back!
I drank this smoothie Saturday morning before going to brunch because I can’t ever go to brunch without having a pre-brunch snack. Isn’t brunch such a peculiar thing? You wake up at 8 am (ok, 7:30) but then you wait around until 11 to go to brunch, so what are you supposed to do…. not eat until 11?! THAT’S CRAZY. So I decided to whip up this smoothie for the second time and it hit the spot and held me over until it was time to feast.
While this pistachios smoothie is on the sweeter side, it’s chalk full of vitamin C, so I think that counts for something (helloooo strawberries and orange!). And if you’re wondering what to do with that other half of the orange, you can A) make a double batch of the smoothie and force your significant other to drink it, or B) put the orange in the refrigerator and save it for the next time you want to make this (or any other) smoothie. Problem solved!
- ¾ cup raspberries*
- ¼ cup strawberries
- ½ orange
- 2 tbsp pistachios
- 1-2 tbsp honey
- ¼ cup milk of choice
- Place ingredients in a blender and pulse until smooth.
