This Kumquat Ricotta Toast is topped with kumquats, honey, walnuts and fresh ginger and is ready in just five minutes!
That’s right, not just any toast…. FANCY TOAST. ‘Cause it’s Thursday and we all deserve some fanciness. Though let’s be honest, I’d say that any day of the week.
Things around here have been crazy. I often feel like a chicken running around with its head cut off trying to balance all the things, and in between I find myself trying to squeeze in recipe shoots, which I love love love doing, I’ve just been—dare I say struggling—to find the time. But, I’m vowing to make a little more time next month, if only because I enjoy the creativity of each photo shoot. Does that sound silly? It’s true!
Also I saw these kumquats at the store and immediately wanted to make toast, though I feel like it might be nearing the end of kumquat season….? I’m not a huuuuuuge kumquat fan, but when paired with the correct things, the tartness of them is oh-so-tasty.
And I mean, you can’t really ever go wrong with ricotta toast.
So…this kumquat ricotta toast. Let’s talk about it. It’s bread topped with ricotta then some kumquats, crushed walnuts, grated ginger, shredded coconut, and honey! MMMMMMM. And guys, go heavy on the honey. It’s a must-do. Plus, it tames the tartness of the kumquats. Seriously! Then, when you have leftover ricotta, you can make this toasted almond french toast because why not?! TWO BREAKFASTS. Or one breakfast one snack. You know, whatever.
I actually made this toast twice and the first time I left the ginger out so I can say that technically the ginger is optional, but if you like ginger you’re going to want to add it. I always find honey+ginger to be such a good combo, and it doesn’t disappoint in this recipe.
Five minute recipes are my jam, and this kumquat ricotta toast is just that!
- 2 slices bread
- ½ cup ricotta cheese
- ¼ cup kumquats, sliced
- 2 tbsp walnut pieces
- 2 tbsp shredded coconut
- ½ tsp fresh ginger, or more to taste
- Plenty of honey to drizzle over top
- Toast both slices of bread, then spread ricotta over top.
- Top the ricotta with kumquats, walnuts, coconut, and ginger, then drizzle them with honey.
