Holiday meals are some of my favorite meals. I mean, how could they not be? They involve a TON of food and they’re a time when my whole family gets together to EAT. Some years, Miguel and I go to DC to celebrate, while other years we stay in Pittsburgh and either celebrate at my grandma’s or even at my mom’s house now that she lives close by. Regardless of where we are, I know the one guaranteed thing is that there will be food, food and more food.
The tricky part about holidays is having to accommodate to everyone’s dietary needs. My family doesn’t have too much of an issue with this, though my vegan brother does kind of throw us for a loop. What do we make? What do vegans even eat?!!!! <—I’m speaking from a general “oh shoot, I guess we have to include vegan dishes”, which sounds way more intimidating than it is.
If you don’t already have your Easter meal planned yet, have no fear. I GOT YOU. I’ve partnered up with Whole Foods Market this year to bring you a few of their ready-made foods, along with a few recipes of my own.
So let’s break down what Whole Foods Market has to offer—you need to hear this because they’re making it CRAZY simple for ya. Depending on your dietary needs, the first option is their Easter Ham Dinner for 8, which includes a spiral sliced half ham and three side dishes, or you can simply order their Spiral-Sliced Ham and their Berry Chantilly Cake for dessert and make your own side dishes, which is what I did. If you go with the first option, you get Asparagus with Almonds and Lemon (vegan), Roasted Beets with Sherry-Shallot Vinaigrette (vegan), and Potato Gratin with Gruyére, so there is truly something for everyone.
For my Easter feast, I decided to cook their spiral-sliced ham, which was wayyyyy less intimidating than I anticipated. I simply placed it in the roasting pan it came in, filled the pan with a bit of water, covered the ham with foil and cooked the ham for about 45 minutes in the oven. That’s. It. It was so, so good, or as my mom said, “this ham is really tasty!”
For my sides, I made my roasted carrots with lemon yogurt sauce and farro (can easily made vegan if you use dairy free yogurt OR omit the yogurt all together), my pesto smashed potatoes (completely vegan on their own), and my kale salad (omit the cheese for a vegan-friendly salad). Needless to say, my brother was quite pleased with the selection, as was my whole family, really.
Last but certainly not least was the Whole Foods Market Berry Chantilly Cake. It’s not a secret that dessert is my favorite part of every meal. I can’t help it. I’m not going to lie, I wasn’t sure what a Berry Chantilly Cake was, but the presentation of the cake (and the smell) assured me that it was going to be delicious. Essentially, it’s a vanilla sponge cake with fruit filling and a cream cheese mascarpone icing. <—uhhh yeah, to die for.
