This Raspberry Blood Orange Parfait is made with yogurt and a blood orange chia seed compote and topped with pomegranate and chopped chocolate.
Another blood orange recipe? Already? I told you! You see I’m kind of still behind on recipes from December—December being a busy month with freelance work, so it’s either this or a salad recipe, and for reasons I’m unsure of I’m opting for the blood orange parfait.
Wait, what I meant to say is I’m opting for the parfait because blood orange season only lasts so long and I want you all to make it now! You can make salad any time of year. I mean, really.
Also as I look at my window right now, the snow just will not stop falling. The only time I really love it is when Layla’s playing in it because she just looks so happy and carefree. Or around Christmastime. But now? I’m a little over it. I also realize how cliche it is to complain about the snow right now… my excuse is that it’s 3 pm, and 3 pm is not my “writing hour”, as I like to call it.
I typically try to write my blog posts before 10 am, aka when my brain is functioning like a normal person, but that did not happen today because days don’t always go as perfectly planned, and that’s okkkkkk, but my brain—and ok my body—is dragging right now. If I were the type of person to have a second cup of coffee, now would be the perfect time to do so.
WOOF. Can you say woe is me? ENOUGH. I’m over it. I’m over me. I must talk about food. So, let me tell you a secret about these yogurt parfaits. Because I’m so weird and only kind of like yogurt sometimes, I decided to combine yogurt and mascarpone. I KNOOOOW, genius. Or maybe *extra*, depending on how you look at it.
Tip: If you want to make this into more of a dessert parfait, feel free to use half the amount of yogurt and sub in 1/3 cup mascarpone cheese and 2 tbsp powdered sugar. It’s quite tasty!
If you’re a normal yogurt-eating human being, you will love this blood orange parfait for breakfast, but if you are me, you will love love LOVE them as dessert. They are good, and you deserve goodness all day every day.
- 1 cup plain Greek yogurt*
- For the compote:
- ½ cup raspberries
- 1 blood orange, peeled with seeds removed
- 2 tsp chia seeds
- For topping:
- 1-2 tbsp pomegranate seeds
- 1-2 tbsp chopped dark chocolate, or more
- Begin by making the compote. Combine the raspberries and orange in a pot over medium-high heat, using a wooden spoon or spatula to break up the raspberries and release the juices.
- Once mixture comes to a low bubble, reduce heat to a simmer and stir in the chia seeds. Allow to simmer for 2-3 minutes and then remove from heat.
- Ideally, you'll want to wait until your compote cools before eating your parfait, but if you're too impatient (I know the feeling) you can just layer the yogurt and raspberry orange compote, top it with some pomegranate and chocolate and dig in!
- To speed up the cooling process, you could always pour the compote into a bowl and place the bowl in the freezer or refrigerator.
