This Sun-Dried Tomato Chicken Salad Sandwich uses mayonnaise and a homemade sun-dried tomato pesto to flavor the chicken, and then adds arugula and feta for a little something extra.
Whoaaaaaa, I’m really jumping the gun with spring-like recipes here. Maybe because about a week ago it was practically 70 degrees and now it’s quite literally freezing outside. So, prepare yourself for a handful of spring-like recipes in the upcoming weeks. I guess you could say I’m ready for the warmer weather to stay. Sigh… despite the weather, let’s get our sun dried tomato chicken salad on, shall we?
BUT FIRST, I feel like I want to talk about TV. I realized I didn’t do a “February Things” post because at the time, I felt like there was nothing major that happened in February and, since I didn’t do one, I feel like we haven’t discussed TV shows recently. Like Girls and Big Little Lies, both on HBO but if you aren’t watching well… you should be. How are we feeling about Girls? I’m really loving this season so far even though Marnie makes me want to stab my eyes out after every single scene she’s in. And Hannah might be the most likable character as of late, which is so strange. Oh and if you haven’t seen/heard of Big Little Lies, it’s because it’s a new show with Reese Witherspoon and Nicole Kidman and it’s drama-filled and catty and I kind of love it. So does Miguel, but don’t tell him I told you guys, k?
Phew, so glad we got that out of the way. I just need to talk about something other than food sometimes, ya know? But, even when I’m not making/thinking/talking about food, I sort of secretly want to be.
Alas, we must discuss this chicken salad sandwich. Or, more specifically, the sun dried tomato chicken salad sandwich, i.e. chicken salad covered in my sun dried tomato pesto. It’s magical and SO QUICK to make! True story: I’m sort of obsessed with chicken salad. Not the lettuce with chicken on top kind, but the mayo-covered kind. My obsession began when I worked at a grocery store and I would eat it (along with a pistachio muffin…so healthy) on my break. I still love it, though recently I ate an absurd amount before having to teach a barre class and it panned out to be a really terrible idea.
So that’s why I practice portion control. Also, I feel like we just got mildly side-tracked. What I’m trying to say is that this chicken salad is pretty healthy and has TONS of flavor—way more than traditional chicken salad, if I do say so myself. I paired it with arugula and a bit of feta cheese for a colorful meal and it was fab.
Chicken salad sandwich lovers/anyone craving spring-like food, this one’s for you!
- 2 chicken breasts, cut into bite-size pieces
- 1 tbsp olive oil
- ¼ cup plain yogurt
- ¼ cup mayonnaise
- ¼ cup sun-dried tomato pesto*
- 2 slices bread
- 1 handful arugula
- 1-2 tbsp crumbled feta cheese
- Heat olive oil in a skillet and cook chicken until done.
- While chicken is cooking, prepare the sun-dried tomato pesto by blending ingredients in a blender.
- Pour pesto into a large bowl and stir in the yogurt and mayo; stir until everything is combined and then, once the chicken is cooked, add chicken to the bowl and stir until chicken is completely coated.
- Assemble your sandwich with the chicken salad, arugula and feta cheese and enjoy!
